Some chocolates contain soy lecithin, an emulsifier that improves the fluidity of the chocolate in its liquid state, a quality sought after by chocolatiers to improve moulding and coating of their bonbons.
If the intention is for the chocolate to be eaten as a bar, the addition of lecithin is not necessary.
